Liula-kebab Recipe

Origin: Georgia      Period: Traditional

Ingredients:

1.8kg lean, minced, lamb
12 tbsp fresh mint leaves (or 6 tbsp dried mint leaves)
4 tsp salt
75g onions, finely chopped
12 spring onions, chopped
1 tbsp freshly-ground black pepper
2 garlic cloves, minced
1/2 tbsp ground ginger

1 tbsp chilli pepper flakes

Liula-kebab Preparation:


Method:

Pre-heat your barbecue until the charcoal has burned down and is covered in a layer of grey ash.

Meanwhile, in a large bowl, combine the minced lamb with all the other ingredients. Beat with a wooden spoon until the mixture is smooth. Take a ortion of the mixture and shape into sausages about 9cm long and 5cm in diameter. Thread these onto wooden skewers that have been pre-soaked in water, leaving a 3cm space between them.

Transfer to your barbecue and cook until nicley browned and cooked through (usually between 12 and 15 minutes).
